Red Clay Beef Company is rooted in land stewardship and regenerative grazing. Our work is simple: leave the land better than we found it, and let the beef be the byproduct. By keeping cattle moving across living pasture, we build deep roots in the soil and strong roots in our local food system. Our cattle are 100% grass-fed and grass-finished — harvested from microbe-rich, living soils and fresh forage, producing a cleaner, more nutrient-dense beef product.

Roast Heavy

The Potlicker

For the family that knows good food takes time. Loaded with chuck, rump, sirloin tip, and eye of round roasts — all cut at 4 to 6 lbs — this option is built for slow cookers, Dutch ovens, and Sunday suppers that fill the house with the smell of something worth waiting for. You still get all four premium primals for the grill, but the heart of this box is in the roast.

Steak Heavy

The Steakman

For the grill master who wants every steak the animal has to offer. Primals plus chuck eye, denver, flat iron, hanger, tri tip, and bavette. Maximum variety, minimum roasts. One rump roast and the grill does the rest.

Perfect for Two

The Couples Cut

Tailored for a 2-person household. Same great primals and full roast selection but sized smaller — 2 to 3 lb roasts and 1 lb ground beef packs so nothing goes to waste. Less bulk, more variety per meal.

Ground Heavy

The Busy Beef

Made for the family that lives on ground beef. Tacos, burgers, meatballs, chili — if it goes in a skillet, this is your box. Primals kept for special nights, everything else goes through the grinder in 1 lb packs.

From our farm to your freezer
in four simple steps.

Step 01

Choose Your Beef

Browse our four cut options — The Potlicker, The Steakman, The Couples Cut, or The Busy Beef. Select the package that fits your household and your freezer. Choose from a Whole, Half, or Quarter beef.

Step 02

Submit Your Reservation

Click your preferred size to open the full inventory and reservation form. Enter your name, email, and phone number. Use your access code to submit your reservation. We will receive your order instantly and follow up within 24 hours to confirm your spot.

Step 03

Pay Your $250 Deposit

Once your reservation is confirmed, we will send you a Square invoice for your $250 deposit. This locks in your price and secures your share. The deposit is applied to your final balance. Deposits are due 30 days prior to harvest.

Step 04

Pay in Full at Delivery

Once your beef is harvested, processed, and ready, we will coordinate custom home delivery straight to your door. Your final price is calculated based on the actual hanging weight of your animal. We will send your final Square invoice at delivery — your $250 deposit is already applied.

Final price is determined at harvest. Estimated totals are based on average hanging weights. Your price per pound is locked in at the time your deposit is received — no surprises at delivery.

How we sell our beef.

Beef Purchase & Buyers Club

Our beef is sold through a Buyers Club made up of long-standing customers who have supported our farms for years. Buyers Club members always receive first priority when beef shares become available.

If an existing member cancels or does not reserve their share for a given harvest, that opening is released to the public on a first-come, first-served basis.

Harvest Season & Quality Standards

We harvest beef from May through December only. We DO NOT harvest during the winter months — cattle taken off dormant forage produce an inferior product.

We only harvest animals off actively growing pasture to ensure proper finish and the highest-quality grass-finished beef.
